Sweet Roasted Fruit with Vanilla Frozen Yogurt - Serves 6
INGREDIENTS:

2 ripe pears, cored and cubed

2 ripe peaches, remove pit and cubed

1 cup of red grapes, cut in half

1 cup pineapple chunks

2 teaspoons butter
-
2 teaspoons vanilla
INSTRUCTIONS:

Heat oven to 425 degrees.

Melt butter and vanilla in microwave until blended.

Toss all cut up fruit with butter and vanilla.

Spray a baking sheet with canola oil and spread fruit on sheet.
-
Cook for 25-20 minutes or until pears and peaches are soft.
-
Serve with a low-fat, vanilla frozen yogurt.
