Sweet Roasted Fruit with Vanilla Frozen Yogurt - Serves 6

 

      INGREDIENTS:

  • 2 ripe pears, cored and cubed
  • 2 ripe peaches, remove pit and cubed
  • 1 cup of red grapes, cut in half
  • 1 cup pineapple chunks
  • 2 teaspoons butter
  • 2 teaspoons vanilla

 

 

     INSTRUCTIONS:

  1. Heat oven to 425 degrees.
  2. Melt butter and vanilla in microwave until blended.
  3. Toss all cut up fruit with butter and vanilla.
  4. Spray a baking sheet with canola oil and spread fruit on sheet.
  5. Cook for 25-20 minutes or until pears and peaches are soft.
  6. Serve with a low-fat, vanilla frozen yogurt.
